  • 1 cup beef stock
  • 3 lb. boneless round roast or rump roast
  • 2 tsp olive oil
  • 3 cloves garlic, sliced
  • 2 tsp thyme
  • 1 tsp basil
  • 1 tsp rosemary
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp pepper

  1. In your Instant Pot, pour the beef stock in the bottom of the pot and cover it with a metal pressure cooker insert.
  2. On the side, mix your seasonings in a small bowl so that they are well blended.
  3. Before adding the roast to the pressure cooker, make ½” deep cuts in it and put garlic slices into each cut. Pour the olive oil and seasoning mix over the roast. Carefully rub in the oil and spices, so the roast is well-coated; make sure you do not knock out any of the garlic slices.
  4. Add the roast to the pressure cooker. You do not want the roast touching the liquid below, so use the metal insert and a pressure cooker safe dish to keep them separated.
  5. Put the lid on the pressure cooker and lock it. Pressure cook on the high-pressure setting for 3 minutes. The three minutes should start after the cooker reaches the correct pressure; if you have an electric pressure cooker, it will automatically start the timer when it reaches a high pressure, but with a manual, stovetop pressure cooker, you will have to pay attention to when the pressure gets high enough and start a timer yourself.
  6. After 3 minutes is up, do not unplug or open your pressure cooker. Instead, set it to warm. Leave it on the warm setting for 2 ½ hours. Check the temperature of the roast.
