Express Barbecue Chicken

  • 1 bottle of barbeque sauce, 16 oz – not honey style
  • 1 can pineapple chunks
  • ½ sliced onion
  • ½ cup of water
  • 2-4 boneless skinless chicken breasts


  1. Empty the bottle of barbeque sauce into your express cooker
  2. Cut your chicken breasts in half and place on top of the barbeque sauce in the cooker.
  3. Add ½ cup water into your barbeque sauce bottle, cover, shake and empty into your cooker.
  4. Empty your can of pineapple chunks, with juice, into your pot. Add sliced onion, if desired.
  5. Stir gently, so the chicken is coated.
  6. Set express cooker to poultry and cook for about 12 minutes.
  7. Remove from express cooker and serve

Apple-Cranberry Grains

Prep: 10 minutes

Cook time: 25 minutes

Servings: 10


  • 2 medium apples, peeled and chopped
  • 1 cup of sugar
  • 1 cup fresh cranberries
  • ½ cup of wheat berries
  • ½ cup quinoa, rinsed
  • ½ cup oat bran
  • ½ cup medium pearl barley
  • ½ cup chopped walnuts
  • ½ cup packed brown sugar
  • 1-1 ½ to 2 tsp ground cinnamon
  • 6 cups of water
  • Optional: milk, brown sugar, chopped walnuts, and apple slices


  1. In express cooker, combine first 11 ingredients
  2. Lock lid, close pressure release valve
  3. Adjust pressure to high and set time for 25 minutes
  4. When finished cooking, allow pressure to release for 10 minutes naturally
  5. Then quick release any remaining pressure
  6. Service with optional ingredients if desired

Buffalo Shrimp Mac & Cheese

Prep: 15 minutes

  • 2 cups of milk
  • 1 cup half-and-half cream
  • 1 tbsp unsalted butter
  • 1 tsp ground mustard
  • ½ tsp onion powder
  • ¼ tsp white pepper
  • ¼ tsp ground nutmeg
  • 1-1/2 cups uncooked elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Gouda or Swiss cheese
  • ¾ pound frozen cooked salad shrimp, thawed
  • 1 cup crumbled blue cheese
  • 2 tbsp Louisiana-styled hot sauce
  • 2 tbsp minced fresh chives
  • 2 tbsp minced parsley


  1. In express cooker, combine first seven ingredients; stir macaroni
  2. Lock lid; close pressure-release valve
  3. Adjust to pressure-cook on high for 3 minutes
  4. Allow pressure to naturally release for 4 minutes, then quick release any remaining pressure
  5. Press cancel
  6. Select sauté setting
  7. Adjust to normal heat
  8. Stir in shredded cheeses, shrimp, bleu cheese, and hot sauce
  9. Cook until heated through, 5 to 6 minutes
  10. Just before serving, stir in chives, parsley, and, if desired, additional hot sauce
