Cooking Instructions

  1. Julienne the onions, green peppers, and bacon. Season the chicken with the salt, pepper, crushed garlic, thyme, and bay leaf.
  2. In the pressure cooker, heat the olive oil and then add the chicken, garlic, and bacon. Brown them and then remove the whole. Fry just the onion and green pepper together in the same oil for 10 to 12 minutes. Re-add the browned chicken and bacon to the pot.
  3. Pour the wine over all the ingredients and spice with bay leaf — Cook out the alcohol.
  4. Cover the chicken with chicken stock (you can make chicken giblet stock beforehand or buy chicken stock). Close the pot and cook over high heat.
  5. Once the valve starts to release steam, lower the heat, and cook for 25 to 30 minutes.
  6. Remove the pressure cooker from the heat, allow to depressurize, and then serve with rice, red peppers, and paprika.

John Civick says November 19, 2019

I recently purchased a III Magefesa 8 L pressure cooker (Infusion cooker) and need a lid gasket. The bottom of the pot says III Magefesa .8L 01086. Doe anyone know the stock number or model number of the gasket I need to buy?
Thanks!
