Rib-Eye Steak with Brandy Sauce

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 1/2lb rib eye
  • Salt & pepper
  • 2 tbsp butter
  • 2 tsp Worcestershire sauce
  • 25ml Armagnac brandy

Cooking Instructions

  1. Place the pressure cooker on the stove, with the lid off. Add the olive oil and heat it until it pops when you sprinkle water on it.
  2. Add the rib eye and cook on medium to high heat for 3 minutes. Flip. Cook opposite side for 2 minutes.
  3. Add a small amount of water, a pinch of salt and pepper, and then put the lid on top of the cooker.
  4. Set the valve to position 2 - for meats - cook for 5 minutes. Start the time from when you hear the first whistle sound from the pressure valve.
  5. Turn off the heat. Let some of the pressure release and then remove the lid. Remove the meat as well and set it aside.
  6. Place a pot on the stove, on medium heat. Heat the butter and Worcestershire sauce. Add the Armagnac and stir occasionally. Once the sauce is slightly thickened, serve it over the ribeye.

This Easy Rossa pressure cooker, made by Lagostina, is one of their safest pressure cookers. The handle on top is easy to open and close, but it snaps into place once it’s closed to ensure the pressure is contained while you are cooking. The handle and lid remain locked until the pressure cooker has released the pressure and steam to a point that it is safe to open the lid.

You have two cook settings to choose from - one for vegetables and one for meats.

This makes things simple; pressure cookers that have several different settings to choose from can sometimes make recipes more complicated than they need to be.

This pressure cooker cooks food evenly and fast. It works on most types of stoves, including induction, gas, ceramic, and electric. You don’t have to worry about switching pans if you have a certain kind of stove. If you are thinking about using the pressure cooker outdoors, it’s never a good idea to put a pressure cooker directly over an open fire unless there is a sufficient gap between the flame and the bottom of the pot, like with a gas stove.

This pressure cooker, the Lagostina Preziosa, is the most comfortable to hold out of all the Lagostina pressure cookers because of the rounded shape of the pot and easy to grip handles. Like the others, this one also has what Lagostina calls a “Leverblock” lid, which keeps the lid locked down tight while pressure is in the pot. However, the lid locks even with very little pressure, so it may take some waiting time for the pressure to go down before you’re able to open it for serving.

Overview

Lagostina pressure cookers work really well, and they’re made with high-quality materials, like stainless steel. They might not be great for cooking large servings of food because they’re generally made for small to medium sized servings, or for around 5-7 people. The detachable handles on some of them could be an issue as well; if the handle isn’t put back on correctly after cleaning, it might slip off while you’re carrying the pot causing you to drop it.

Thankfully, the lid doesn’t have any issues with staying on because of Lagostina’s super safe Leverblock system. Other pressure cooker companies sometimes make their pressure cookers with a lid that overlaps the pot; this setup doesn’t adequately keep the pressure in all the way.
